Ottolenghi's career and influences

Yotam Ottolenghi was born in Jerusalem, Israel in 1968 and grew up in a Jewish family. Ottolenghi later moved to Tel Aviv and studied comparative literature at university. It was during this time that he discovered his passion for cooking. 

In 1997, Ottolenghi moved to Amsterdam and then to London, where he quickly made a name for himself in the culinary world. At the beginning of his career, he worked as a pastry chef in some of London's most renowned restaurants, including the Michelin-starred Capital RestaurantKensington Place and Launceston Place in Kensington New Town. He later opened a deli in the Notting Hill district of London together with Palestinian chef Sami Tamimi.  

Yotam Ottolenghi is now the co-owner of seven delis and restaurants in London and the author of several Bestselling cookbooks. His cookbooks are known for their creative and healthy recipes, which are often inspired by his Mediterranean and Middle Eastern roots.

Ottolenghi's culinary philosophy

Ottolenghis culinary Philosophy is based on the idea that eating should be an experience. He believes that food is not only there to satisfy hunger, but that it also connects us with other people and brings us into contact with other cultures. His dishes are known for their Complexity and their Variety of flavors. He often uses unusual combinations of ingredients and spices to create unique taste experiences. 

An example of his unconventional Approach is his dish "Roasted cauliflower with saffron, raisins and hazelnuts". This dish combines the mild taste of cauliflower with the sweetness of raisins and the nutty aroma of hazelnuts. The addition of saffron gives the dish a slightly earthy note that goes perfectly with the other ingredients. It is a dish that appeals to the senses in a completely new way.
